Tips And Hints For Paleo Baking

No one imagines that stone age people actually ate raspberry muffins or chocolate brownies. However, versions of these treats can be compatible with Paleo diet guidelines. Many common ingredients are off limits in Paleo baking, since foods must not include grains or dairy products. Luckily, with a little creativity, the home baker can produce healthier cakes, cookies and breads.

Wheat flour is the main ingredient in most modern baked goods, but almond flour makes a good substitute in many recipes. Coconut flour, found in health food shops, is another popular alternative. Macadamia nuts, hazelnuts or walnuts can be ground into a course meal, but, due to their high oil content, over-processing will turn them into butter.

You can save money by purchasing raw almonds in bulk bags and grinding them into flour. Blanch the nuts for ten seconds in boiling water to loosen the skins, then rub between two sides of a towel to remove them. Process small batches in an electric coffee grinder. Sift to remove any remaining chunks and store in a sealed, airtight container.

Baked goods are typically made with vegetable oils, butter or margarine to keep them soft and moist. Lard is one of the best alternatives and is also economical. It was commonly used in cakes and biscuits before the invention of dangerous trans fat shortenings. Tasty baked goods can also be made using coconut oil, which is known for its many health benefits.

Honey and maple syrup can be used in place of refined sugar in cakes and cookies. Their sweetness is more concentrated, so less is required. Three teaspoons of honey is the equivalent of four teaspoons of sugar. Natural sweeteners add moisture to recipes, so cut back on added liquids when using significant amounts.

Starchy vegetables such as yam, pumpkin or butternut squash add body, moisture and sweetness to baked goods. Puree in a food processor before using. A basic bread can be made with a cup of vegetable puree, 2 cups of almond flour, 2 tablespoons melted lard, 2 tablespoons honey, 2 teaspoons mixed spice and 2 eggs.

Paleo baking does not require chemical leaveners such as bicarbonate of soda. To make your vegetable bread, separate the egg yolks and whites. Add the yokes to the rest of the ingredients and beat until smooth with an electric mixer. Whisk the whites until stiff and carefully fold into the batter. Pour into a prepared loaf pan and bake for 45 minutes at 350 F. Allow to cool for 30 minutes before slicing.
