By Ben Harper

Becoming a good cook isn't as hard as you probably think it is. Cooking is the perfect opportunity to refine skills, experiment with new techniques, and discover what dishes really suit your talents. The following tips will guide you in expanding your cooking techniques plus give you new ideas to try out. Read on to see how you can become a better cook!

Always properly measure cooking oil. If you measure the amount of cooking oil you use instead of just dumping some into a pan, you are far less likely to overdo it. Doing this lets you be very mindful of just how much oil you are actually using in your cooking.

Many food items leave their odors on cutting boards, which can linger even with vigorous scrubbing. Put a waterproof mark on the end of the cutting board so you'll know which side to use.

Add oil to the pan's sides when cooking. Adding oil in this way allows the oil to heat before it reaches the food in the center of the pan. This will give more flavor to what you are cooking.

Depending on your recipe, make certain you choose the right potato for the job. There are three different classifications of potatoes, all-purpose, mealy, or waxy. With their crumbly, dry texture, mealy potatoes are great for mashing. Russet potatoes are popular mealy potatoes. All-purpose Yukon gold potatoes are suited for any dish. Potatoes that are considered waxy are good for steaming and boiling because their shape is held. The most popular waxy potatoes are red potatoes or white potatoes.

Are you partial to using fresh basil in your cooking? You can cut basil by the stems, bunch it together, and put it in a glass. Cover its stems with water. Just set it on the counter top, and it will be good for several weeks. If the water is changed periodically, the basil may even sprout roots. Trim the basil once in a while so it grows even more and stays fresh.

Find a spot that is dry, cool, and dim to store herbs and spices. Spices rapidly lose their flavor and aroma if they are kept in areas that are bright, humid, or warm. Exposing the spices to these kinds of conditions can enable them to lose their flavor.

Tomatoes can be easily dried. Dry your own by slicing ripe tomatoes 1/2" thick, or cut Romas in half, lengthwise. Set them on a rack cut side up and sprinkle lightly with salt. Set the rack on a cookie sheet in an oven at 190 degrees for a 10 hours. The tomatoes can then be placed in plastic bags and stored in the freezer. Dried tomatoes may also be stored in a jar containing fresh herbs and olive oil. When refrigerated, they will last a minimum of two weeks.

Pie crusts and tart crusts should be cook a bit past the point that you think they should be cooked. Your crust should be a deep caramel as opposed to a light goldenrod. The crust changes to the caramel color only after the sugar has had time to caramelize. This will give the crust the sweet flavor you want.

There is more to cooking than piling food on a plate. It is an enjoyable hobby for many people and you get to eat your creations. You may fail here and there, but using this advice, they can happen less often. When you use this advice in your kitchen, you will notice an improvement in your cooking skills.
